Let’s talk Cinnamon!
We make a lot of goodies that contain cinnamon at Old Town Farmstand. Why do ours stand out as amazing? Well aside from the other ingredients like organic raisins, house made vanilla extract and imported vanilla beans the cinnamon we use is not your everyday supermarket cinnamon. We use an organic Ceylon cinnamon powder in our baked goods. Ceylon cinnamon is a bit sweeter and more floral in flavor compared to Cassia cinnamons. For a bit of perspective here is an excerpt from a great article discussing the different cinnamons that I got a kick out of. If you are interested read the whole article, it explains the differences in cinnamons well!
— “Ceylon cinnamon’s flavor and aroma are extremely mild and delicate—it definitely reads as "cinnamon," but with subtle, almost floral notes in there. Tasting Ceylon cinnamon is like listening to your favorite vinyl record on a $4,000 stereo system, from the comfort of a leather Eames lounge chair, while cassia cinnamon is like listening to an mp3 version of the same album on the stereo in your friend Steve’s 1993 Honda Civic. You can still appreciate the music in the car, but...the chair. That’s where you want to be.”—
